Thanks to those of you who came and visited our charity bake sale.  We had an absolute blast!  It's amazing how great service feels.  We were all nothing but smiles, and sometimes tears at how generous and kind people are.  It is a great reminder that even though there is a lot of bad and ugly things in the world, that people are legitimately kind and good hearted. There were many times we were choked up when people would hand us $40 for a plate of cupcakes, or a $100's for a plate of cookies.  We were all touched and thankful for so many who came and supported this great cause!If any of you feel inclined to start this tradition in your neighborhood, I would say do it!!  It was a great bonding experience for all of us, as well as our kids to work on this project together.  We were thrilled when we found out we raised just under $1,000!  We can't wait to see if we can do even better next year :) I am grateful for great friends who are so supportive of our crazy ideas! We were so glad our friend Millan and her baby Rodney (from Haiti) could be there to see everyone's support.
  We kept losing Blake with all of the people, so someone had a brilliant idea to tie balloons to him so we would always know where he was.  I need to do this more often!!

The kids had a fun time on the corner trying to direct traffic to our sale.  A few of them even thought if they dressed up in costumes they would get more customers.  I think the hot dog costume did the trick :O)
Now..let's talk amazing food!  We had seven tables filled with some of the most delicious treats and food we have ever tasted. Several items were huge hits!  Homemade wheat bread were some of the first to go, we will have to make several more loaves next year.  My friend Camille's Cinnamon Rolls were gone before you could blink an eye.  We also had banana bread, chocolate chips cookies, pizza rolls, calzones, chocolate mint brownies, breadsticks and MUCH more!


I am excited to share two new recipes that were sold at our bake sale that were BIG hits!  First, are my friend Betsy's Cherry Brownies.  They are super simple to make, but so moist and delicious we all couldn't get enough.

Cherry Chocolate Chip Brownies
1 box brownies (any brand will do)
1 can cherry pie filling
1 c. chocolate chips
Follow the directions on the brownie box, except omit the water (add the eggs and oil).  Then add the can of cherry pie filling and chocolate chips.  Bake in a greased 9x13 pan and bake according to the brownie directions (you might need a few more minutes since it is so moist). Once baked, cool until chilled and ready to frost.


Cherry Frosting:
4-6 oz. cream cheese, softened
2 T. softened butter
1 1/2 t. almond extract
Powdered sugar
Maraschino cherry juice (as needed)
Cream the cream cheese and butter until smooth.  Add the extract and powdered sugar (about 1-1 1/2 lbs.). Add maraschino cherry juice and more powdered sugar until the frosting is a soft and smooth texture.  Once the brownies are cool, frost with the frosting.

If you want to be extra fancy, drizzle the top of the brownies with melted chocolate or chopped maraschino cherries.


The second recipe we all loved was my friend Chrystal's recipe for Butterscotch Bars.  They are buttery, rich & amazing! The jelly roll sized pan was sold before the first 15 minutes were up.  Next year, we'll have to make a few more batches :)

Butterscotch Bars
4 sticks butter, melted
4 c. flour
1 c. sugar
Dash of salt
Melt the butter and place in a bowl.  Add the flour, sugar and salt and mix together with a hand blender until combined and a little crumbly (it will still be soft though).  Press half of the dough mixture into the bottom of a greased jelly roll (cookie sheet) pan (this recipe can be halved and done in a 9x13 pan).  Bake at 350 for 7 minutes (it will look slightly underdone, but that is okay).  While the crust is baking, mix together in a sauce pan over low heat the following:
2 cans sweetened condensed milk
1 bag of white chocolate chips (divided in half)
1 bag of milk chocolate chips (divided in half)
1 bag of butterscotch chocolate chips (divided in half)
 Cook on low the milk and half of each bag of chooclate chips, until the chips are melted smooth. Once the crust is done being baked, remove from the oven and pour the chocolate chip mixture on top of the crust.  Sprinkle the remaining crust mixture on top of the choclate layer.  You will not be able to cover the entire top and that is okay.  Sprinkle the rest of each bag of chocolate chips on top of the crust.  Continue baking for another 25 minutes.  Remove from the oven and let sit over night or in the fridge until it sets up.  Once it is set, cut into squares and serve.

For those of you who have followed my blog for awhile you have heard me mention all of our 'crazy' boys in our family. You see, I grew up with three sisters and NO brothers.  We were a home filled with make up, dresses, boy talk, and everything pink. It wasn't until my second child was born that our family had the first boy join our clan.  He was born ALL boy and has wanted nothing to do with anything pink & frilly ever since.  At first (and even still) I wonder what to do with boys.  Not having a brother I have to constantly ask my husband, "Did you do that when you were his age??"  We are finally getting the hang of the 'boy' thing after having had 11 of 16 of  the last children born to our family be boys.

We have all accepted the fact that after ten boys in a row we were destined to never have another baby girl in our family.  The other part of this story is that my Mom makes it a well known fact that girls are her favorite.  We laugh that she doesn't even try to hide it.  We keep telling her until she learns to love the craziness of boys, heaven will keep sending them.
 (Our crazy cousin clan with 11 boys & now 5 girls (12 yrs. & under)--we are a noisy bunch to say the least!)
Well, this is where the story gets really fun.  My oldest sister & her husband decided to play the BIGGEST prank on our family. She had three boys four years and under and we thought for sure another boy would be born. Well...they found out at 16 weeks they were having a GIRL and played a joke on us for the rest of her pregnancy, telling us she was having a boy.  In our family we have to have a party for everything! When someone is expecting we always have a 'finding out' party to  find out the gender of our next babies.  We have the doctor write the gender of the baby in an envelope & open it together so we can all scream and ooh-ah as we find out who the next addition will be to our family. My sister threw this traditional 'finding out' party and even made a blue cake to help convince us that she was having a boy.  We all were convinced!

So.. for six months we talked about her next little boy, thought about boy names, planned everything around them having a fourth boy.  It wasn't until the delivery of the baby that we all got the surprise of our LIFE!!  Watch this hilarious video as we all come into the hospital room thinking Angela had a baby boy and come to find out had a precious, beautiful baby GIRL--super funny!

(*Please ignore my tired, over worked, hair-undone self.  After a long day of running around crazy like Moms always do, my husband and I ran to the hospital at 10:30 pm to see the new bundle. I look haggard and scary, but the reactions are still worth sharing...no make up and all.  Oh, and my brother in laws reaction is so funny because he has guessed now 16 of 16 births/genders right.  He has awesome baby-vibes ;)

Okay, now for a delicious PINK recipe in honor of this cute baby girl in our family.  My sister hates cinnamon rolls, so I decided to do a girly version with strawberries.  These strawberry rolls were totally amazing and the perfect way to celebrate baby Oakley coming home ;)

Strawberry Swirl Rolls
Cinnamon Roll Dough Recipe
Strawberry Butter (you will have extra butter that you won't need for these rolls--the butter freezes great if you don't have any other plans for it...like eating it by the spoonful :)
2 sticks butter, softened
1/2 c. strawberry jam
3-4 fresh strawberries, crushed
1/2-whole can sweetened condensed milk
1 t. vanilla
With a hand mixer, blend together the butter and other ingredients until smooth. Add enough condensed milk to make the butter to your desired sweetness.

Strawberry Frosting:
1 stick butter, softened
2 lbs. powdered sugar (I used about 1/2 c.-3/4 c. less of a 2 lb. bag of sugar--only add as much as you need to make a creamy frosting)
1 t. lemon juice
Dash salt
2-3 T. strawberry jam (I like freezer jam, it has a more fresh taste)
1 t. vanilla
4-5 T. milk
Make the roll dough as the recipe explains, roll out and then top the dough with about 1-1 1/2 c. of our strawberry butter.  Roll the rolls up like a cinnamon roll and place on a greased cookie sheet (16 per sheet).  Let them rise until doubled and then bake at 350 for 30-40 minutes, or until lightly golden brown on top and no longer doughy.  Once they are out of the oven, make the strawberry frosting and spread all over the rolls.  Serve warm or cold, they are delicious!!

It's almost summer and to me that means bring on the food fest !  I love big bbq's with family and friends, picnics in the park, pool parties, sleepovers with cousins, and everything having to do with warm weather and great company. The other day I was needing a dessert recipe that could feed the masses--you know, the whole extended family gang.  I found this awesome recipe from Mel's Kitchen Cafe that was super easy and delicious! It fed a group of 30 people and curbed everyone's chocolate cravings. If you need a crowd pleasing dessert that doesn't take a lot of time and will feed a large group, this is the one!
 
Candy Bar Cheesecake Brownies
Brownie Layer:

2 chocolate fudge cake mix
1 small package chocolate instant pudding
3 eggs
2 sticks butter, melted
With a hand beater, mix together the above ingredients until combined (batter will be thick and a little crumbly). Grease a large cookie sheet (jelly roll pan). Spread and flatten the batter into the bottom of the cookie sheet evenly.
8 candy bars of your choice (Reeses Peanut Butter Cups, Fast Breaks, Twix, Butterfingers, etc.), chopped
Cut the candy bars into 1/4 inch pieces and spread evenly over the top of the brownie layer.
3 (8 oz.) cream cheese, softened
3 eggs
1 t. vanilla
Pinch of salt
1 c. sugar
Beat together the cream cheese mixture in a bowl until smooth. Pour over the top of the brownies and candy bars. Bake at 350 for 45-50 minutes, or until the center of the cheesecake is firm and set, and lightly golden brown. Remove from the oven and let cool on the counter for 10-15 minutes. While the brownies are cooling, prepare the ganache topping:
12 oz. bag of good quality milk chocolate chips
4 T. heavy cream
Place the chips and cream in a microwave safe bowl. Microwave the chocolate chips for 30 seconds at a time, and then remove from the microwave and stir the chocolate until the chocolate becomes smooth and combined. Pour the melted ganache over the top of the cheesecake brownies. Let cheesecake brownies cool and keep in the fridge until ready to serve. These are great warm served with vanilla ice cream or chilled in the fridge. **You could 1/2 this recipe and put in a 9x13 pan if you don't need this much dessert ;)
 

Mexican Crescent Squares & Black Bean Avocado Salsa

A few years ago my dear friend brought me this dinner. I'm sure it was after I had just had a baby or something, but this many years later I still remember REALLY enjoying it. It is a spin off the classic Chicken Crescents or Chicken Pillows as some call them. I tracked down the recipe from a random blog online, where I guess it did make it's appearance in a darling cook book. But I have to admit I simply took the recipe and literally spiced it up a little!

Mexican Crescent Squares and Black Bean Avocado SalsaRecipe Adapted from: Gathering Place 2 c. cooked and shredded chicken (I use the cooked chicken from my freezer)1/4 c. red peppers, diced small8 oz. cream cheese1/2 t. cuminDash cayenne pepperSalt & pepper to taste1 t. lime juice1 can diced green chiles1/4 c. green onions, chopped1/2 t. chili powder1/2 c. butter, softened 1 c. seasoned breadcrumbs 2 (8 oz.) crescent or biscuit roll doughIn a bowl, mix together the cream cheese, green chilies, green onions, chili powder, red peppers and cumin. Add the shredded chicken and combine. Preheat teh oven to 350 degrees. Separate crescent rolls to form 8 rectangles, pressing seams together. Place 1/2 c. of chicken mixture in the middle of each rectangle and roll up ends. Seal edges. Dip each square in melted butter and then roll in crushed breadcrumbs. Place on a baking sheet and bake for 20 minutes at 350. Garnish with the Black Bean Avocado Salsa.
Black Bean Avocado Salsa1 ripe avocado, seeded, peeled and diced6 roma tomatoes, chopped2 t. fresh lime juice1/2 c. frozen corn, thawed1 can black beans, drained1 can black eyed peas, drained (or just use more black beans)2/3 c. cilantro, chopped2/3 c. green onions, sliced1 can green chiliesSalt and pepper to taste1/2 c. Italian dressingTortilla Chips (serve extras with chips on the side)Combine all of the salsa ingredients together and let marinate while the crescent squares are cooking. Mexican Rice

 Mexican rice at our house has become a touchy subject until...last night. As each good wife does when you first marry you make the standard recipes your mom used to make. Well, years go by and I finally caught on to the fact that I was the ONLY one eating the Mexican rice at dinner. My husband admitted that he only believes in eating rice that actually has flavor. So I went on a hunt and experimenting to find a side dish that pleased me and his taste buds. Let's just say after some tweaking and adding jalapenos this was delicious.
  Mexican Rice
2 tablespoons butter1 1/2 cups long-grain rice1/2 cup chopped onion1/2 cup chopped green bell pepper1 clove garlic, minced2 ½  cups water1 (14 1/2-ounce) can diced tomatoes 1 can green chilies1 jalapeno, diced1 teaspoons chili powder1 teaspoon salt1 cup shredded Cheddar
Directions:
In a large saucepan, melt the butter over medium heat. Add the rice, onion, peppers, and garlic. Cook until the rice is browned and vegetables are tender. Stir in the water, tomatoes, chili powder, and salt and bring to a boil. Reduce the heat and simmer, covered, until the rice is tender, about 17 to 19 minutes. A quick recap of our housing situation is this:

Homes in Phoenix, AZ are on the market for mere hours unless there is something really, really wrong with it. We are not opposed to working hard on a fixer upper in a good neighborhood. It does not have to be a castle.

The prices are so good that the investors have returned with a vengeance.

We were hopeful on one house but lost out.

There are currently 8 houses in our MRLS portal. We have seen them all.

I am a type A personality. (Big shocking reveal I know!)  I like to plan and have my ducks in a row. On Tuesday I had a flat out panic attack. Sweaty, heart beating out of my chest, etc. I was thinking about being homeless and that this is the last week of school for Sweet Boy and the Fashionista leaves in 3 weeks for her summer internship at a fashion house in California and she needs a car and did I mention in a few weeks I will be homeless?

Bring on the hyperventilating.

Generally I punch out the panic with prayer. My go to books are Proverbs and the Psalms. They are filled with promises of protection and provision.

So, yesterday my neighbor shows up with a beautiful boy on my doorstep. She had rescued him from a sad situation and thought “I know who will take him.”

Now, don’t look into his eyes….

Oh, it’s too late you already did, didn’t you?

So I sent Mr. Décor his picture and said “This dog is homeless and yes, I know that technically in about 30 days we will be too. We both know that God has a sense of humor and His own sense of timing. But what if this is sort of like Jesus dressed in a dog suit asking to trust in Him that He will provide?”

Mr. Décor is fair and pragmatic. Even when his wife is clearly off her rocker

 

He said, “I will see you tonight and meet the dog then.”

By now two children had gotten wind of the situation and were giving me “the look”. You know the one:

So it played out like this:

Mr. Décor came home. New guy barked once and immediately sat when Mr. D said “Sit.”

Mr. D. sat down and the new guy laid next to him. After a minute or so he laid his paw on Mr. D’s arm tentatively asking “Father may I?” The new guy gingerly climb onto Mr. D’s lap. One minute more and a kiss was bestowed.

I had fed and loved the little charlatan all afternoon and had not received such adoration. It was clear he knew where his bread was buttered.

Mr. Décor had to leave for cub scouts and said he would “Think about it.”

Later that night I came upon him looking at the internet. “Did I ever show you the guy that our Rudi is named for?” He asked.

Rudolf  “Rudi”  Völler, a fabulous German soccer player.

Now you must remember two things.

Mr. Décor was born and raised in Panama and loves soccer.

We lived in Germany and dachshunds were originally bred in Germany.

So then Mr. Décor shows me another soccer player that he likes.

Franz Beckenbauer, another fabulous German soccer player.

I’m thinking “Wait, what? Dog names. NO! You’re the pragmatic one. Tell me we cannot keep this dog.”

Last week I announced to Mr. Décor that I didn’t plan on moving the contents of our panty or the back up pantry. (Our back up panty is a small cupboard devoted to canned goods and staples.)

Canned goods weigh A LOT!  So nope, I’m not gonna move them. 

I continued on with the conversation.

Me: “So, that means that dinner around here is about to get interesting.”

At that moment I saw a twinkle in Mr. Décor’s eye. I could tell that it was on the tip of his tongue to say “How is that different from any other night?”

But Mr. Décor is a smart man who knows that I know where he sleeps. He also knows where he doesn’t want to sleep.

So he instead said, “Ok, sounds good.”

Now, someone tell me what to do with all these beans.
