It's nearly winter. To me, this means soup several times a week. I love warm soup for dinner on a cold day. One of my favorite moments of winter is standing in my kitchen, chopping vegetables, having soup simmering on the stove, warm bread in the oven, and Christmas music playing in the background. Did I say Christmas? Yes! Can you believe it is already on the radio? With a husband like mine (Mr. Griswald himself!), we listen to it for nearly 2 months straight ;)

There are not many magical moments here at our house with five young and crazy kids, life busy as ever, but when we all sit down to a warm bowl of soup and homemade bread, life just seems to be good. It's not perfect, but moments like that make me grateful for good food to eat, beautiful children, a warm home, a job to provide for our family and for this holiday season where family and friends seem to be more precious than ever. If you need a soup to warm your heart & soul this time of year, this soup is hearty, creamy, spicy and totally fabulous!! You will love every last bite, and soak up the juices with some homemade bread. Life is good, isn't it?

Zuppa Toscana Sausage & Potato Soup
1 1/2 lbs. Italian Pork Sausage
4 russet potatoes
1 onion, diced
8 c. water 
1 1/2 T. chicken bouillon or chicken base
1/4-1/2 t. cayenne pepper
1 pint heavy cream
2 garlic cloves, minced
1/2 t. black pepper
1/4 t. paprika
4 c. kale, chopped fine
1/2 c. Parmesan or mozzarella cheese, shredded
1 t. salt
Chop the onion into small pieces. Peel the potatoes and rinse. Slice the potatoes into very thin slices. In a large soup pan put the sausage and onions into the pot and saute until sausage is browned and onions are soft. Once sausage is cooked, add the potatoes, garlic and seasonings to the pan. Stir the potatoes into the sausage mixture and then add the water and bouillion (or chicken broth). Bring soup to a boil and cook until the potatoes are tender, then add the kale that has been chopped fine, into the pot. Continue to boil until kale is soft. Add the heavy cream and cheese to the soup and mix. Let soup simmer until ready to serve.  Season soup with more salt, pepper or cayenne to suit your families taste.
