Bruschetta Turkey Burgers with Avocado Mayo

Why is it that when I think of what I want to make for dinner, a good-ol' homemade burger is always on the top of my list? My husband enjoys the fact that our date nights are often spent visiting some of our favorite burger joints. I think it's the salty, cheesy, combinations that I just love (totally unhealthy I know!). Thus..the reason I came up with this turkey burger that is a little on the lighter side than a greasy beef burger. I saw a recipe similar to this on Studio 5 awhile back and have recreated the recipe to fit my family's likes. The great thing about this burger is the turkey is not dry (my husband's pet-pieve). The vinegar, egg & cheese in the ground turkey help the patty's stay extra moist and flavorful. Since I am trying (haha!) to eat a little healthier this year, I ate this burger without a bun and it was still heavenly! This burger will be added to my monthly menu plan for sure! Enjoy ;)

Bruschetta Turkey Burgers
Bruschetta
5 roma tomatoes, diced
1 t. balsamic vinegar
1 T. olive oil
3 T. basil, thinly sliced (fresh is best)
1 garlic clove, minced
Salt & pepper to taste
Dice the tomatoes into small pieces and place in a bowl. Add the balsamic, oilve oil, fresh basil, garlic and salt & pepper. Set aside until burgers are done.
6 ciabatta rolls, whole wheat buns or hamburger buns
Turkey Burgers
2 lbs. lean ground turkey (you could also use chicken breasts that have been marinated in a little basil and balsamic)
1 garlic clove, minced
3 T. balsamic vinegar
1 t. dried basil
2 eggs
1/4 c. bread crumbs
1/2 t. black pepper
1 t. salt
1 c. shredded pepperjack or monterey jack cheese, shredded
6-8 slices of pepperjack cheese (for the tops of the burgers on the grill)
Combine the turkey burger ingredients into the ground turkey and mix thoroughly. Once the turkey is mixed, form the meat into 6-8 large patties, about 3/4 inch thick. Spray or oil an outdoor grill and heat to a medium-high temperature. Place the patties on the grill and cook on both sides until the turkey is browned and no longer pink in the center (don't over cook or the turkey will be dry)--a little charring will give the burger good flavor. Place a slice of pepperjack cheese on top of each burger right before serving, and let melt slightly. Serve the patties on the buns with the bruschetta on top and a generous helping of the avocado mayo on each side of the bun.
Avocado Mayo Spread
2 avocados, mashed
2/3 c. mayonnaise
Salt and pepper to taste
Dash cayenne pepper
1/4 t. garlic powder
In a bowl, mash the peeled and pitted avocados. Add the mayonnaise and seasonings to taste.
