Sour Cream & Chive Yukon Gold Mashed Potatoes
8 Yukon Gold Potatoes, peeled and cut into 2-3" chunks
1/4 c. Sour Cream
3 tbsp. Butter
2 tbsp. Chives, chopped
1/2 tsp. Kosher Salt
1/4 tsp. Fresh Ground Pepper
Add potatoes to a large saucepan and cover with cold water. Bring to a boil, and cook until potatoes are tender with a fork, approximately 15 minutes. Drain water and return the potatoes to the pan. Add sour cream, butter, chives, salt and pepper to potatoes. Mix together with an electric mixer until the butter has meltedand most of the lumps are gone. Serves 6.
