Happy Thanksgiving everyone! In a couple days all of our Thanksgiving feast will be well over, our stomachs bursting at the seems and we will be busily out shopping all of those great Black Friday sales. Before the craziness of the weekend came I wanted to post a few of my favorite ways to use your leftover Thanksgiving foods. Enjoy and have a wonderful weekend!
This sandwich was inspired from one of Melanie's delicious recipes, we just gave it a little twist. The warm panini is a delicious way to use your leftover turkey and is packed with a lot of great flavor!
Turkey Avocado Club with Sundried Tomato Mayo
8 slices bacon, cooked and drained
1 avocado, sliced thin
2 c. spinach leaves
8 slices swiss cheese
2 c. shredded turkey breast or good quality turkey lunchmeat
2 fresh tomatoes, sliced (optional)
4 ciabatta buns
Sundried Tomato Mayo
1/2 c. mayonnaise
1/2 c. sundried tomatoes, packed in oil and rinsed, and chopped
1/2 t. oregano
Salt & pepper
Dash of cayenne pepper
Cook the bacon until crispy and then drain on a paper towel. Slice the fresh tomatoes and avocado thinly. Shred the turkey breast. Prepare the sundried tomato mayo and season as desired. Spread the sundried tomato mayo on both sides of each ciabatta bun. On each sandwich place the swiss cheese (on both sides of the bun) and then layer the bacon, avocado, spinach, turkey breast and tomatoes. Close the sandwich and place on a panini grill or on a griddle and cook until the cheese begins to melt and the sandwich gets golden and crispy. Serve the sandwich warm with a cold pickle on the side.
